Guu on Robson near Cardero classically Japanese fusion which can be interpreted as Canadian since we are a big mix here.

check www.dinehere.ca for reviews by locals of places by price, food area..good website with honest reviews

Downtown is small geographically so your question opens all the options. Our classically Canadian affordable restaurants include Cactus Club and Earls which are arguably the reason Hooters didn't survive in Vancouver. Worth a Google. http://www.cactusclubcafe.com/ or http://www.earls.ca/

There are lots of small eateries on Denman Street in the West End. I love to just wander along the street and find something that takes my fancy. All range of prices and menus.

There is a Greek food restaurant on 1124 Davie St, 604-683-2555 called Stephos. Very good and inexpensive.
