We will be going to the south pacific and specifically American Samoa in November. Just wondering how long everyone recomends? We're thinking about a week but not sure if this is long enough?

A week is fine. In fact, if you can, I'd squeeze in a visit to Ofu for at least 3 days. The island of Tutuila is beautiful, but doesn't really cater much to tourism. Ofu is beautiful, sandy, and more like a picturesque resort island.
